Regardless of Clint's intentions, Julian does look slightly bashful. His alien friend Garak would certainly get a laugh from Clint's comment--Julian is well-known to be anything but subtle in just about every way.
Julian takes Clint's hand and gives it a firm shake before returning it to his side. When Clint asks about what he would do if he discovered an animal, his eyes widen momentarily before he shakes his head "no".
"I don't think I could stomach doing that just yet." Even though Julian is an accomplished surgeon, it's far different manipulating a lifeform when he's attempting to save it. Not to mention most of the time the equipment he has does allow him to keep a certain emotional distance. He's not foolish enough to believe that he could live on a new world without needing to kill for food eventually. He almost wishes he had Starfleet rations to tide him over instead.
"No, I was thinking by observing any of the fauna, I might get an idea of what kind of adaptations the native species here have developed to cope with the environment. They may provide clues as to what to expect here as well as give a better idea of what prey animals or herbs exist--potentially for consumption."
